WESTER LAWRENCETON CHEESES
are hand-made with raw milk from our own organically reared Ayrshire cows.
We use GM-free vegetarian rennet.
SWEET-MILK is based on the traditional Dunlop recipe, brought by Barbara Gilmour on her return, in 1688, to the parish of Dunlop from exile in Ireland. It was originally called Sweet-milk Cheese, because the cream was not skimmed from the milk, as was usual in Scottish cheeses.
CAROLA was developed in the style of the cheeses made on the crofts of the North-East of Scotland. In researching the cheese, I decided to use the method of a French tomme to avoid excessive dryness – and consequent loss of flavour –which is sometimes a problem with this sort of farm cheese. GLEN MORAY CAROLA is a rind-washed version of the original CAROLA, commissioned by Glen Morangie in celebration of the local single malt.
